Every August we make a trip down to South Padre Island for a little R & R.  It’s a nice get away.  During the trip there are a lot of things we must do; there’s fajita Friday, bay fishing, dinner at Blackbeard’s, and of course breakfast at Manuel’s.  Manuel’s is actually located in Port Isabel on the other side of the bridge next to the historical Point Isabel Lighthouse.  It’s a quaint red building, a little run down but welcoming.  The inside is littered with all types of memorabilia, from football banners to posters of Scar Face and John Wayne.  Clearly it’s not the decor drawing people in the door, instead it’s the Texas sized portions of great Tex-Mex classics.  They’re open from 7a.m.- 2p.m. Tuesday-Sunday and their tortillas are made fresh on site every day, hence this post.  From our table, down a long hallway, we could see a lady fast at work making their tasty tortillas.  I ventured to the back where she was working and asked if I could take her picture.  She seemed very flattered and I was greatful.  The last picture is the finished product stuffed with bacon, egg, cheese and potato. Mmmm… Just the thought of it makes my mouth water.  Please enjoy and try not to drool. 🙂
